Molly Merrett - Beets & Barley
A “paleo” diet eliminates the foods that can cause inflammation and other health issues- all grains, beans, dairy products and refined sugar. Although the diet may seem restrictive, there are many, many simple, delicious meals and treats that can be prepared and enjoyed.
Class 1 - Paleo Cooking We’ll make simple, nourishing dishes using local and organic meats and vegetables. Recipes may include veggie noodles with simple bolognese sauce, sweet potato topped shepherds pie, Thai style chicken soup, smoky chicken chili, and curried chicken salad in lettuce wraps.
Class 2 - Paleo Baking We’ll make a variety of grain free desserts that are sweetened with fruit and vegetable purees and maple syrup. Recipes may include butternut squash maple macaroons, sweet potato pie with an almond flour crust, maple walnut apple crumble, and chocolate sweet potato torte.
This series of two classes is being taught by Molly Merrett – former farmer, passionate cook and the chef and owner of Beets & Barley Catering. Classes meet for 2 1/2 hours once per week for two weeks.
Time: Thursdays, April 26 and May 3, 6 – 8:30 pm
Cost: $75 (plus $30 for ingredients payable to instructor)
