Many people find that they have allergies or sensitivities to gluten and feel better choosing a diet without it. In this class, you will learn how many favorite dishes can be made gluten free using whole food ingredients. Participants will explore alternative flours, make a flour mix that can be used in a variety of recipes, and prepare healthy, satisfying meals and baked treats. All recipes will be vegetarian with vegan variations provided.

Class 1 - Gluten Free Baking You will learn about gluten free flours for baking. Recipes may include cowgirl cookies, morning glory muffins, applesauce oat spice cake, red velvet beet brownies.

Class 2 - Gluten Free Cooking You will make some classic dishes with healthy, gluten free ingredients. Dishes may include mac and cheese with butternut squash and kale, broccoli leek quiche with a potato crust, and zucchini noodles with roasted vegetable marinara.

This series of two classes is being taught by Molly Merrett – former farmer, passionate cook and the chef and owner of Beets & Barley Catering.  Classes meet for 2 1/2 hours once per week for two weeks.

Time: Thursdays, April 5 and April 12, 6 – 8:30 pm
Cost: $75 (plus $30 for ingredients payable to instructor)
